Simple Chicken and Rice

If you are looking for a simple and quick dinner recipe to fix on a busy weekday night, try this boneless chicken recipe. It was handed down from my mother and I have proven its goodness many times as my family always enjoys it.

You will need:

4 boneless chicken thighs

1 can cream of mushroom soup

1 can cream of celery soup

1 can cream of chicken soup

1 cup rice (uncooked)

Mix soups and rice in casserole dish. Place chicken breasts on top. I put bread crumbs and a few dots of butter on chicken for browning and to prevent drying out. Bake at 350 degrees for 45 minutes. Serve with vegetable and crusty bread. Delicious!

" Fried" Chicken

Everyone has their favorite fried chicken recipe. I have tried to create an updated healthy version that will be popular with everyone including the kids.

You will need:

4 boneless chicken breasts

1 large egg

1/2 cup milk


cracker crumbs

olive oil

With rolling pin, crush cracker crumbs to fine consistency. Place on a platter.

Beat egg and add milk in a bowl.

Put flour on piece of plastic wrap

Place each chicken breast between 2 pieces of wax paper or plastic wrap. Pound with a mallet until thin, approximately 1/4 to 1/2 inch. If chicken .breasts are large, you can use one for 2 people and cut it in half.

Dredge chicken breasts in flour. Dip in egg and milk mixture. Coat with cracker crumbs both sides. Place in heated olive oil. Watch olive oil so that it's not too hot as it fries quickly.

Brown on both side until golden and crunchy and chicken is cooked through.

You can serve as chicken fried steak with gravy or on a large bun as fried chicken sandwich. Easy and delicious.

"Sweet Chicken"

This is a favorite of my granddaughter. I have adapted it for home preparation and it is easy and quick

You will need:

Chicken nuggets, frozen from grocery

Sweet & Sour Sauce, bottled or your own recipe

1 Tbsp olive oil

Long grain rice

Buy chicken nuggets from the freezer compartment at your grocery. Use as many as you like for each serving. Heat olive oil in large skillet. Brown chicken nuggets until golden brown on both sides and add sweet & sour sauce. Add sauce according to your taste. Some like it sweet so add more sauce. Cook until sauce coats chicken.

Cook rice according to directions and serve chicken alongside or on top.

Variation: You can add chopped red peppers, pineapple and green onions to chicken & sauce mixture.
